Origin-Burundi Gakenke

In Burundi, wet mills can typically reach farmers in a radius of 3km. Gakenke washing station has 2,685 registered farmer members, spread over 22 hills in the Kayanza province.

Unlike in Central and South America, each producer in Burundi grows coffee in their back yard and own roughly 250 coffee trees per family, which translate to 200-300kg coffee cherries per year.

The entire process is monitored at every step: from pulping, floating, fermentation time, washing, grading in the channels and to final soaking. Depending on ambient temperature, the coffee is fermented in water from a nearby stream for 10-12 hours. It’s then transported to the drying table for 14 to 21 days, depending on the weather condition.
