“Colinas comes for the coffee varietal, Java. The Mierisch family who produced this coffee, obtained this varietal by chance in the late 1990s when Erwin Mierisch’s father and grandfather were driving back from one of their farms, and noticed a man on the side of the road selling fruit. They stopped to purchase some and noticed that the man had a bag with him that was labeled “Java”. Intrigued by what it contained, they bought a bag.”
“The Java coffee was planted at their farm Limoncillo shortly afterward and went on to be awarded second place in the Cup of Excellence awards several years later. Today the coffee has a medium, firm body, and long refreshing finish with sweet notes of nectarine and cherry.”
