Origin- Rwanda Mushonyi

Mushonyi washing station is situated just one kilometre away from the shores of Lake Kivu. The 1,200 growers that deliver cherry to this station live and farm on the hills surrounding Mushonyi.

Mushonyi was originally built by the army. At the time, the army was anticipating high volumes of coffee cherries, so built the station to accommodate. It has eight fermentation tanks, a standard washing channel, and a cherry sorting shed for additional sorting before the cherries are de-pulped.

The team at the washing station have incredibly high standards. After purchasing coffee cherries from producers, they’re subject to a strict sorting process to separate into high and low-quality. Following sorting, the cherries are laid to dry in the sun on raised beds where they’re turned regularly to ensure even drying.
